3.5 lb. beef tenderloin
shrimp peeled and cooked
1/2 tbs. butter, melted
1 tsp. Lemon juice
1/4 cup chopped green onion
Sauce
1/2 cup butter
1/2 cup dry white wine
sliced mushrooms
1 Tbs. flour for thickening
Cut tenderloin lengthwise to about 1/2 inch from the bottom
(butterfly it)
Cook shrimp then drizzle with lemon and butter.
Place shrimp in beef and tie up with string at 1 inch
intervals.
Place meet in a shallow roasting an and bake at 425 approx. 30
minutes per pound (medium doneness)
Sauce: In saucepan cook green onions with butter over low
heat. Add wine and
stir frequently. Add
mushrooms and maybe 1 Tbs. flour to thicken.
