3 eggs
1 cups sugar
2/3 cup pumpkin
¾ cup plain flour
1 tsp. Cinnamon
1 tsp. Baking soda
Combine ingredients and pour into a jelly roll pan lined with wax
paper. Bake 15
minutes at 350. Turn
onto a cheese cloth, while warm remove wax paper. Roll and let cool.
Filling:
1 8oz pkg. Cream cheese, soft
½ stick butter, soft
1 cup powdered sugar
1 tsp. Vanilla
Mix together filling
ingredients. Unroll pumpkin roll, spread cream cheese mixture onto cooled
pumpkin roll, and roll up again.
Chill. Before
serving, dust with powdered sugar and slice into 1 inch rings.
